Why is there such a big difference in my ratings for each game speed?

Check my profile and you can see a 500 rating difference. Do people just not try very hard in correspondence games? I'll usually use the analysis board to look ahead before I move, and spend up to 10 minutes per move. I'll also consult opening guides and videos.

My bullet was 100 lower, but I snatched some lucky wins from berserking, higher rated players in a tournament.

Is this unusual? Or is it a different sort of skill to win quick games? If so, what can I do to improve my blitz/bullet, other than playing?
I dont know why you'd want to improve your bullet or blitz rating. Aren't those just throwaway games anyways to try out new things, openings, etc?

When I play bullet, I beat people waaay higher rated than me 33% of my games---on time---and it's always in the endgame when I am losing on both position and material. Stupid practice.
Yes it's normal.

Some are better at slow time controls. Although if you are using the analysis board instead of your head to analyze the possible variations then that's is most likely the reason why you are higher rated on correspondence. There is a big difference between placing the pieces on a board than placing the pieces on your head :P.

Bullet is super fun, who cares if it's not useful. I love it.
